Understand the floor drain ecosystem first
You can't sell a program you don't understand. A commercial kitchen isn't one drain — it's a network of fixtures feeding a shared branch that ties into a grease interceptor and then the sanitary main. Know each piece by sight and by name, because the manager doesn't.
Floor sinks
The recessed, tiled or fiberglass basins you see under dish machines, prep sinks, and ice bins. Equipment drains indirectly into them through an air gap. Hub drains
